Tuesday, February 4, 2020. Happy birthday to my Mother! Hope you have the best day ever!
This morning we decided to check out the cafe Ginny told us about, Ema’s Cafe in Lafayette. She said they had the best Crab Cakes Benedict ever. I used to love those at the La Pepe’s that was at the Edison Plaza building there in downtown Beaumont. They were a little pricy for breakfast, but I was known to treat myself occasionally! This place did not disappoint! I did have the Crab Cake Benedict topped with Hollandaise Sauce and Dennis chose the Cajun Benedict. The Cajun was a crawfish cake topped with crawfish étouffée! Both were AMAZING. If you are anywhere near Lafayette and love a Benedict, you need to check this place out. We try them everywhere and seldom get one with the egg poached perfectly. These were text book poached eggs!
While in Lafayette we went by Breaux’s Mart to pick up the chicken salad and great meat we have been hearing about. It is grey and rainy outside so we will just go home and hang out for the rest of the day. Maybe finish my crocheted basket I have been working on.
Well, it didn’t quite turn out like a basket. I went off script to make it bigger than the instructions. It is now a bag, but a good bag!
Tonight, we will go to Scott, La. and pick up some Best Stop Boudin before meeting Kelvin and Ginny for super! We will also get to see the progress on ‘Driftwood,’ the wooden boat Kelvin has been building. It has some of the coolest features I have ever seen. No cleats, the lines run through the deck and retract back into the boat! Also the fenders have no lines either! They just attach to the deck with a stainless pin! Can’t wait to see him splash this thing!!!
Supper at Uncle T’s was awesome! Thanks for meeting us Kelvin and Ginny! See ya on the way back in April.
